Pumpkin Scotchies Pumpkinate something today. 1 1/4 cup cups all-purpose flour 1 tsp. baking soda 1 1/2 teaspoon pumpkin spice 1/4 teaspoon salt 1/2 cup unsalted butter, softened 1 cup pumpkin puree 3/4 cup granulated sugar 3/4 cup packed brown sugar 1 large egg 1 teaspoon vanilla 3 cups quick or old-fashioned oats 1 2/3 cups (11-ounce package) butterscotch chips Preheat oven to 375 degrees Combine flour, baking soda, pumpkin spice, and salt in a small bowl. Set aside. Beat butter, sugar and brown sugar until fluffly. Add egg and vanilla extract. Then add pumpkin. Mix until well combined. Gradually beat in flour mixture. Stir in oats and butterscotch chips. Drop by rounded tablespoon (or with a cookie scooper) onto ungreased baking sheets (I like to line my baking sheets with a silpat or parchment paper to make cleanup easier). Bake for 10 to 14 minutes (it took 12 minutes in my oven but you should check them around 10 minutes to be safe). Cool on baking sheet for 2 minutes. Remove to a wire rack and cool completely.
